Oh LUCKY ME ! updated instructions, please read; Hi Teri, The flour is all purpose regular flour, you need add some salt warm water to make the dough, not too much salt, i think it is about one teaspoon. My mom doesn’t have a mixer, so it is lots of hand working in it. About the meat pie, it has pork in it, some green onion, soy sauce, cooking wine and some vegetable ( cabbage, chinese napa, green bean….), really depends how you like it. Chinese people like ginger root and garlic in the pie, most of them like hot pepper too. We don’t have oven in China, so again we use pan fry, some vegetable oil, medium heat, each side about five minutes. I am not good at this kind of stuff, tried few times here but not came out tasty. hello mrsuraci, may i suggest you use the noodle dough immediately or within a few hours within the same day as preparing…..I noticed with the leftover noodle dough , they combined extra rice flour and then prepared meat pies for frying in hot peanut oil ….. i can’t wait until i return to jinhua Zhejiang Province to eat these wonderful delicacies once again ! YUM !

Normal dry pasta takes 7-10 min to cook, Fresh pasta will cook much faster, usually;y 3-5 minutes in boiling water ……eventually with practice you will cook the noodles to your own preference from al-dente to soft texture…..have fun and best of luck ! aloha, teri

Fresh always good ,i been to china many times but always saw the noodle making in the restaurant and always feel that is really amazing ,now i living in Finland ,here is hard to find a original chinese food ,so this is why i search for this noodle making in You tube and i will try to do some day because i miss the noodle so much ,when come to my situation ,i will make and cook for myself more and you tube is my chef master ,i made many foods which from my hometown Malaysia too
Actually June, they make fresh noodles and meat pies daily, it’s like how we make toast, it routine and no one thinks about the rising time because they do chores inbetween …. For sure, nothing tastes better than FRESH !
